Pico de Gallo Potato Salad

Ingredients

  • 1 large handful of chopped romain lettuce (or spring mix)
  • 3/4 cup cooked pinto beans
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1 -2 yukon gold potatoes, diced
  • 2 tablespoons of pico de gallo (made with diced roma tomato, red onion, jalapeño, cilantro, lime juice)

Instructions

  1. Cook the diced potatoes in an airfryer or on a baking tray for 20 minutes on 450f.
  2. Warm the cooked pinto beans on the stovetop or in the microwave and season them with the garlic powder, onion powder and cumin.
  3. On a large plate, place the chopped lettuce, then the potatoes and beans and top with the pico de gallo. optional: 1/2 cup of corn mixed in.
