Cauliflower, Potato, Baby Spinach Soup

Ingredients

  • 4-5 medium white potatoes with skin, chopped into cubes
  • 1/2 cup red lentils
  • 1 large onion
  • 4-5 garlic cloves
  • 1 large head of cauliflower, chopped
  • 1 tsp freshly grated turmeric
  • 1/2 tsp black pepper
  • 1 tbsp chili flakes
  • 1/2 tsp cumin powder
  • 1 tsp chili powder
  • 1.5 tsp Caribbean spice blend
  • 1 tsp onion powder
  • 4 cups of fresh organic baby spinach
  • 5 cups of water
  • salt to taste

Instructions

  1. Combine all ingredients in an Instantpot. Cook for 10 minutes and do a quick release. Blend it with an immersion blender while leaving some chunks. Add fresh baby spinach and combine. Serve and enjoy!

Stovetop Cooking Instructions: Add all ingredients to a large soup pot and cook for 20-25 minutes until potatoes are soft. Lightly mash ingredients with a fork, leaving some chunks.
